French Onion Soup or soupe f à l’oignon
Noun: A soup made with stock, wine and onions, often served with large cheese topped croutons.
French Onion Soup is traditionally not very vegan made using beef stock, wine and cheese. We have a few simple changes to make this Vegan version just as delicious. The Marmite (or Yeast extract spread) adds a rich umami flavour, and helps deepen the colour of the soup. We used a Vegan friendly wine to make this. Lots of wines are now labeled as Vegan so it is easy to check. As is traditional with French Onion Soup, we topped it with a cheesy crouton. There are lots of Vegan cheeses available now, and hundreds of recipes to make your own. I made some @schoolnightvegan Vegan Mozzarella which was perfect for melting.

2 medium onions 1 tsp of vegan butter or oil 2 cloves of garlic 2 tbsp flour 500ml stock 300ml wine 1 Bay leaf 1 Sprig of Thyme 1 tsp Marmite 1 clove Optional: Vegan Cheese & Bread Add the butter/ oil to pan and add thinly sliced onions. Cook for around 5-10 mins on a medium-low until lightly golden. Add in crushed garlic cloves and cook until fragrant. Add in flour into the pan and slowly add stock, mixing any lumps out. Add in the wine, Marmite & herbs and simmer for 20-30 minutes on medium-low heat. The longer you cook this, the richer the flavours will become.
If serving with cheesy croutons, first toast one side of bread under the grill, then flip it over and top the untoasted side with cheese, grill again until the cheese is bubbly.
Dish up the soup and top with the crouton.
